I’ve been asking this question to myself for a good time already… How different really is a Bison steak from a regular steak? And I never did the test. So I decided to buy a Bison Ribeye and compare it to a Grass Fed Beef Ribeye and see for ourselves! We all know that Bison meat is clean, healthy and flavorful meat but I never cooked it side by side in order to taste the difference and have a reliable opinion about it and what better way to do it and share our experience with the people I like the most!

The Cost of Buffalo Meat

About a month ago, we raised our buffalo meat prices. The costs are driven by supply and demand which affects the market price for buffalo set by the USDA, and also other inflationary costs associated with raising an animal and ending up with a consumer ready – packaged product.

We heard from some of you on this price increase and we also had the opportunity to speak with some of you further, explaining that our price increase was absolutely necessary. We wanted to offer all those interested in knowing the costs of Wild Idea’s buffalo meat, the same transparency.

The current USDA price for bison meat on the rail (an animal carcass) is $4.80 per pound. This price is based on grain-finished animals, as there are not enough grass animals to have a USDA data baseline. We add a sliding percentage to the USDA price based on animal weight and because of our higher criteria standards, which include; 100% pasture grass-fed/grass-finished, land stewardship through holistic ranch management, and protection of species.

To further understand the costs, it is also important to understand the salable meat of an animal. We typically harvest animals that are between two and three years of age and the weight breaks down to the following:

A 1,000-pound animal = a 500-pound carcass, which = a yield about 340 pounds of salable meat. Of that salable product, 240 pounds of it becomes ground meat. Comparatively you get 6 to 8 pounds of tenderloin, and around 20 pounds of ribeye per animal.

Our insistence of a humane field harvest also requires a separate crew of four to five workers and includes, a truck driver, sharp shooter, and butchers. The carcasses are then transported back to our plant, where a team of artisan meat cutters, sausage makers, and packagers turn those carcasses into consumer-ready, meat products. Once the product is in the package, there are still two other departments between the product and the consumer; our sales and shipping teams. Plus, there are the expenses necessary to run a business.

Anyone who has ever been in the food industry knows that it is one of the lowest margin businesses in the world. And, even though we consumers spend 20+% less on food than what we did 70 years ago, we ironically still have strong opinions about it. We also get excited when food is cheap: “Five for a dollar!” “Eight bucks a pound!” “Buy one get one free!” We keep our focus on the upfront cost, without looking at the back-end costs of; prairie plow up, species loss, unhealthy soil and water, unhealthy animals, unhealthy food, and so on. The IOU is coming, and someone will have to pay.

Still, it is difficult to wrap our minds around food costs. Recently we received this question, “I just don’t get it, if you don’t have all of those inputs of additional feeds and corn, or, trucking to slaughter facilities, or hauling food to the animals, and your animals are just walking around eating grass, why is your meat more expensive?” Fair enough question. First, the feeds are subsidized by you the taxpayer. Second, for all the reasons mentioned above. And third, you must consider the land health and the land cost. Dan states, “When I bought my first ranch in South Dakota in 1970, the cost of land was $270.00 an acre. When I bought the first chunk of ground on our current ranch it was $400.00 an acre and now land is going for over $1,000.00 an acre. On the Great Plains mixed grass prairies, it takes about 35 acres per buffalo. The only way to bring back the buffalo is to grow our land base. For me this is about conserving and protecting a threatened ecosystem. We simply can’t afford to lose our prairies.”

We should also be reminded that 90% of the buffalo meat that is raised for our food supply is finished in the cattle feedlot system. To compare these two different end products is like comparing apples to oranges. And, not just in taste, but also in the trickle down affects it has on the health of the land, water, animals, our food supply, and us.

Bison and beef are two types of red meat that share many qualities.

Lean cuts of bison and beef are good sources of protein and many nutrients like iron and zinc. Therefore, eating either in moderation can be part of a healthy diet ( 1 ).

Here are the nutritional differences between 4 ounces (113 grams) of bison and beef ( 2 , 3 ):

As you can see, beef is higher in calories and fat than bison.

Both are excellent sources of iron and zinc and provide good amounts of phosphorous, niacin, selenium, and vitamins B6 and B12 ( 2 , 3 ).

What’s more, like all meats, bison and beef are composed mainly of high-quality protein, providing all nine essential amino acids your body needs for growth and maintenance ( 4 ).

Similar taste

Bison and beef have a similar flavor. In fact, it may be difficult to taste the difference in many recipes.

Nevertheless, the taste and texture may differ depending on the cut of meat and preparation method. What’s more, some people claim that bison has a richer flavor and smoother mouthfeel.

Due to their versatility and comparable taste profiles, bison and beef can be prepared similarly. Both can be eaten as a steak, or the ground meat can be used in dishes like burgers, meatballs, chili, and tacos.

Share the same intake recommendations

Many studies suggest that you reduce your intake of red meat, but recommendations on how much you can safely eat differ greatly.

The American Institute for Cancer Research recommends limiting your red meat intake to no more than 18 ounces (510 grams) per week. This includes meats like bison, beef, pork, and lamb (5).

On the other hand, a global report on healthy and sustainable diets suggests that you limit your red meat intake even further to about 3.5 ounces (100 grams) per week ( 6 ).

According to some research, eating a lot of red meat, especially processed varieties, may increase your risk of certain cancers, including colorectal cancer, which is why it’s important to consume it in moderation ( 7 ).

Summary Bison and beef have similar flavors and nutritional profiles, but beef is higher in calories and fat. Though it’s recommended to limit your red meat intake, eating bison and beef in moderation can be part of a healthy diet.

Differences between bison and beef

Although these two red meats seem quite similar, several differences are worth noting.

Bison is leaner and lower in calories

Bison is leaner than beef and may be a healthier choice if you’re looking to reduce your calorie or fat intake.

It has nearly 25% fewer calories than beef and is lower in total and saturated fat ( 2 , 3 ).

Additionally, due to its lower fat content, bison has finer fat marbling, yielding softer and more tender meat.

Farming methods

One of the most significant differences between bison meat and beef may be the diets of the bison and cattle from which they come ( 8 ).

In fact, this difference may also explain some of the nutritional variations between these two meats ( 8 ).

Bison is more likely to be grass-fed, as — unlike most cattle — they’re usually pasture-raised. Thus, eating grass-fed bison may be a more sustainable choice ( 9 ).

On the other hand, beef is more likely to be grain-fed and produced in factory farms. Due to eating a diet composed mainly of corn or soy, the cattle grow at a quicker rate ( 10 ).

That said, as bison meat grows in popularity, some farmers are beginning to feed their buffalo grain to keep up with production demands.

Still, it’s possible to find sustainably raised, grass-fed beef and bison in grocery stores and butcher shops.

Regardless, both grain-fed and grass-fed beef and bison can be part of a healthy diet. However, in the United States, grass-fed meats tend to be more expensive, and some people may not find it worth the extra cost.

More consumers are turning to buffalo meat as a healthier choice that’s often better for the environment. South Dakota is the biggest producer of buffalo, and ranchers there say their biggest challenge is keeping up with the demand.

2011 was not a banner year for the stock market, and anyone heavily invested in the eurozone might be biting their nails right now. But if your business is buffalo you may be looking at some very happy holidays. The market for buffalo meat is booming right now.

And as South Dakota Public Broadcasting’s Charles Michael Ray reports, that comes with some growing pains for the industry.

CHARLES MICHAEL RAY, BYLINE: Turkeys gobble, cows moo, chickens cluck, and buffalo? Well, buffalo do this.

(SOUNDBITE OF GRUNTING BUFFALOS)

RAY: These buffalo are ambling across the wide open South Dakota prairie, munching on grass as they go. The iconic image of free range bison is part of marketing for this animal. Bison raised on grass don’t require corn or grains to fatten up, and that’s part of why they’re seen by many as better for the environment.

Dan O’Brien is the founder of the Wild Idea Buffalo Company. He raises free range, grass-fed bison near the South Dakota Badlands. O’Brien says the market for buffalo is exploding.

DAN O’BRIEN: We’ve put 10 people to work during this recession – this horrible recession that we’re going through. And, geez, that really makes me feel like we’re moving the ball up field a little bit here.

RAY: This year, O’Brien opened a new processing plant to package and ship buffalo meat. His company hopes to hit the million dollar mark, double last year’s revenue. The demand for buffalo is consumer-driven. And one of the buyers of O’Brien’s buffalo meat is Tally’s Restaurant in Downtown, Rapid City, where Kevin Weiland is chowing-down on a buffalo burger.

DR. KEVIN WEILAND: I took a big bite and it’s just one of the best I’ve had in a long time, one of the best.

RAY: Besides being a lover of buffalo meat, Weiland is a medical doctor who wrote the book “Dakota Diet.” It touts the health benefits of buffalo.

WEILAND: Everyone talks about salmon and how healthy salmon is, and how much omega-3 fatty acids are in the salmon. Well, the buffalo, the grass-fed buffalo is I call it the salmon of the prairie.

RAY: But the spike in demand for buffalo has lead to a shortage in supply. To make up for that shortage, bison industry officials are lobbying traditional cattle ranchers to switch to buffalo, but it’s not an easy sell. The cattle market is so strong right now that investing in the new fences and equipment can be unappealing.

In addition, Sylvia Christen, with the South Dakota Stock Growers Association, says that buffalo prices have a boom and bust history.

SYLVIA CHRISTEN: The buffalo market has been very volatile. It’s really strong right now. It’s been strong in the past. There were some years where you couldn’t give them away. And beef, it tends to be – while there is up’s and downs in the market, beef tends to be a lot more steady.

RAY: Buffalo are still a tiny market. There are about 105 million cattle on this continent compared to about 400,000 bison. South Dakota is the country’s largest buffalo producer. And the biggest bison rancher is media mogul Ted Turner. He owns more than 50,000 head.

RAY: Back at the Wild Idea Buffalo Company, workers are counting and packaging ground buffalo meat; some is bound for holiday gift boxes. The company is riding the tide of Internet sales this season and filling more orders than ever.

Jill O’Brien says her free range, grass-fed bison are the fastest growing part of the industry.

JILL O’BRIEN: And the more that people become educated and aware about what they put in their mouth has a direct impact on their health and the health of land, I don’t see it slowing down at all.

RAY: If O’Brien is right and the bison market continues to boom, the rolling hills of the Dakota prairie could end up with even more of this sound.

Our grass-fed and finished bison-beef cross (Beefalo) combine the best of both worlds; better than bison quality nutrition with beefy tenderness, marbling, and mild flavor. Beefalo beef is one of the leanest red meats available and is lower in calories, saturated fat, and cholesterol compared to beef or bison yet is high in Omega-3 fatty acids, protein, zinc, iron, B6, and B12. Our wholesome, nutritionally dense Beefalo beef is enjoyed in every cut available from premium T-bone and ribeye steaks to ribs, roasts, brisket, and ground and is custom cut to each customer’s specifications.

Our Beefalo are born and raised right here in Oklahoma using sustainable and humane farming techniques to fulfill our mission to protect the environment, as well as, the welfare of our animals. While roaming on our open Oklahoma native grass prairie, our USDA Certified Grass Fed Registered Beefalo graze and thrive in a low-stress environment. Our calves are born, weaned, and fed on our open prairie grassland and every animal receives individualized, high quality humane care throughout their lives. We allow our animals to grow at their natural rate, which tends to follow their bison ancestry, without the use of artificial growth stimulants, such as grain, grain by-products, artificial hormones, or antibiotics. Because of our Beefalo breed genetics and our independently verified USDA Grass Fed process, our animals need to grow on our pastures for up to 3 years versus ~1.5 years for grain-fed beef.
