Who among You Knows the Essence of Garlic?
Can your foreigner’s nose smell mullets
roasting in a glaze of brown bean paste
and sprinkled with novas of sea salt?
Can you hear my grandmother
chant the mushroom’s sutra?
Can you hear the papays crring
as they bleed in porcelain plates?
I’m telling you that the bamboo
slips the long pliant shoots
of its myriad soft tongues
into your mouth that is full of oranges.
I’m saying that the silver waterfalls
of bean threads will burst in hot oil
and stain your lips like zinc.
The marbled skin of the blue mackerel
works good for men. The purple oils
from its flesh perfume the tongues of women.
If you swallow them whole, the rice cakes
soaking in a broth of coconut milk and brown sugar
will never leave the bottom of your stomach.
Flukes of giant black mushrooms
leap from their murky tubs
and strangle the toes of young carrots.
Broiling chickens ooze grease,
yellow tears of fat collect
and spatter in the smoking pot.
Soft ripe pears, blushing
on the kitchen window sill,
kneel like plump women
taking a long, luxurious shampoo,
and invite you to bite their hips.
Why not grab basketfuls of steaming noodles,
lush and slick as the hair of a fine lady,
and squeeze?
The shrimps, big as Portuguese thumbs,
stew among cutr guavas, red onions,
ginger root, and rosemary in lemon juice,
the palm oil bubbling to the top,
breaking through layers and layers
of shredded coconut and sliced cashews.
Who among you knows the essence
of garlic and black lotus root,
of red and green peppers sizzling
among squads of oysters in the skillet,
of crushed ginger, fresh green onions,
and pale-blue rice wine simmering
in the stomach of a big red fish?

Garrett Hongo has been exposed to urban street life and cultural alienation at an early age. He and his brother were the only Japanese-Americans in his school back then. For his poems, he delves at history and his own experiences; thus, he uses a first-person point of view (N.A., 2011). His books, Yellow Light and The River of Heaven, explore the experiences of Asian-Americans in Anglo society and used his third book, Volcano: A Memoir of Hawaii, to connect his family’s past by recreating the Hawaii and California of his father and grandfather.
I think what he was trying to convey in the poem was that Americans should appreciate Asian-Americans—to recognize them as Americans as well. He experienced a very difficult life and discrimination especially after the World War II. On the first line, “Can your foreigner’s nose smell mullets,” I think he was referring to the Americans (foreigner). He wrote this poem to show the Americans that there was something more behind the Asian-Americans’ physical appearances; that Asian-Americans have a wonderful cultural heritage that the Anglo society could and should appreciate. Garrett Hongo said, “My project as a poet has been motivated by a search for origins of various kinds, quests for ethnic and familial roots, cultural identity, and poetic inspiration, all ultimately somehow connected with my need for an active imaginative and spiritual life. (Brunner, 2011).”
2. The food mentioned in the poem is not native to the American land. Hongo could not use “normal” words to describe the taste but rather he experimented with words to compare them food to the things that the Americans were familiar with, so that they could taste the food just by reading it. He used this along these lines:
Soft ripe pears, blushing
On the kitchen window sill,
Kneel like plump women
Taking a long luxurious shampoo,
And invite you to bite their hips.
Why not grab basketfuls of steaming noodles,
Lush and slick as the hair of a fine lady,
And squeeze?
He also played with language. He said “It’s delicious!” in another way. Like in:
If you swallow them whole, the rice cakes
Soaking in a broth of coconut milk and brown sugar
Will never leave the bottom of your stomach.
3. By simply reading the title of the poem, the readers might have an impression that the poet knows what he’s talking about when it comes to culinary. Also, the title, Who Among You Knows the Essence of Garlic, somewhat challenges our knowledge (and our taste buds) of the common crop.
Not everyone was blessed with the gift of language. The speaker truly has an eye for telling the details using his colorful language. He has performed a good close observation of the food. He has an ability to make mundane beautiful. The speaker engaged all the senses with beautiful evocation of details. Not only did he touch our sense of taste but the rest of our senses were also triggered.

“Who Among You Knows the Essence of Garlic,” a poem by Garrett Hongo, is dedicated to the foods of the poet’s homeland. This piece of literature is bound together by multiple uses of imagery that serve to recreate these items of cuisine in the mind and senses of the reader. If this was Hongo’s intention, he did not fail in the slightest. It is if as though this foreign aroma had risen from the ink of the poem’s words to my nostrils, while the unfamiliar flavors excited my taste buds. Although this poem doesn’t have a specific setting, it felt as if Hongo created his homeland in the reader’s mind simply by painting these foods in our imaginations. It is odd; while the poem whisked the reader away to a foreign land filled with these aromas and tastes, it also reminded us of home, and of the own unique senses our own cuisine offers. By simply using intricate imagery, the author created one world and revived another, both simultaneously present in the reader’s imagination. At first, I was skeptical of the poet’s constant and seemingly aggressive use of imagery. However, I became patient and let my mind absorb the words and the sensations they carried. I do not regret it. “Who Among You Knows the Essence of Garlic” by Garrett Hongo was, in my opinion, a terrific poem.

“Who Among You Knows the Essence of Garlic?” Reaction
After reading the poem, “Who among You Knows the Essence of Garlic?” by Garrett Hongo, I can honestly say that I am impressed. This author uses some of the most incredible uses of imagery that I have ever read. He uses words that make me almost believe that I can taste, see, touch, and smell all of the ingredients he is describing. I believe that the meaning of this poem was to help others understand and almost taste the food that he is accustomed to and I feel that he accomplished this very successfully through his impeccable imagery. Garrett Hongo’s poem hit home for me as well because being away at college really makes me miss my mom’s home cooked meals. Yeah the dining halls here are great compared to most schools, but nothing beats my mom’s pierogies! The smell of the cheesy potatoes and the sizzle of the butter in the pan as the salt is sprinkled over the already tender noodles is something I look forward to every time I’m home. I love that the author was able to reach out to all of us readers and express his love for food the way I feel about my mom’s homemade cooking. The thing that made this poem stand out to me most was the difference between each use of imagery he used. He not only was able to take over your sense of smell, but throughout the whole poem, I could hear and taste and see all of the ingredients as well. I typically am not a huge fan of poetry but this poem in particular really caught my attention through imagery and through the connection I was able to make with my mom’s home cooked meals.

My initial reaction to Garrett Hongo’s “Who Among You Knows the Essence of Garlic?” was one of confusion. I did not really understand the point of the poem. If there was a message hidden between the letters it flew right over my head and out the window. I understood the poem as if it were about some chef in a restaurant boasting about his culinary prowess. So, I decided that I would try again to understand the poem when I got back to my dorm room.
After rereading the poem and researching the author I found it to make a bit more sense. It seemed to me that the author perhaps felt as though something important to him was being attacked. He mentions foreigners then seems to defend his family so it could be that he was being discriminated against. Since the author of the poem is Japanese-American and was born a bit after the time of World War II, I believe that this would make a lot of sense. He then mentions rice cakes and foods not native to America. Perhaps he wanted to tell the readers that there is beauty in his heritage and that there is no reason to discriminate against him and his people.
